Could you get jetlag from traveling through hyperspace? Yes! It was called hyperlag, and was recently mentioned by Padme in the book Queen’s Hope. Hyperlag seems like a rarity in Star Wars, but I imagine that’s mostly because stories don’t want to deal with it. George Lucas always saw hyperspace as just a story convenience for characters to quickly zip around the galaxy, and he never cared about how it worked.
But it makes sense that traveling from planet to planet would have some effects on a person. The book Mission to Disaster also recently mentioned how odd it could feel to simply travel from one side of a planet to another, going from nighttime to daytime in a matter of minutes. So characters do experience some side effects from interstellar travel, even if it isn’t often mentioned.
